i did something yummy... two things yummy actually...
made up a way of stir frying veggies, AND a wonderful way of making a dessert from apples today.
me so smart.

here's what i did
stir fry
slice baby carrots, green onion, onion, and snow peas
cook in a little oil, soy sauce, pepper to taste, plum sauce, pinch dried parsley... i didn't time how long they cooked for. till they're done.
my yummy apples
thinly slice apples
melt a little butter in a pan
add the apples
add brown sugar (A few spoonfuls), and cinnamon to taste
if desired, also add a drizzle of amaretto
cook on medium/high unitl apples are done, don't burn the butter or sugar!
i'm sure both have been done. but. i re-invented them off the top of my head, so i'm happy.

it's so fun to discover that you can cook! i made seafood quesadillas one night, because there wasn't anything else to make and all i had was crab meat, tortilla shells and cheese.. i was so proud of myself. really, i went around telling people for days because i "invented" a recipe.http://nervousness.org/forum/iB_html/non-cgi/emoticons/wink.gif

A few years ago my husband informed me that I could no longer say "I'm a lousy cook" to people whom I thought might ask me to bring food to church functions or something. :^ ) (He never did think I was a lousy cook, but he had reached the point at which he thought the quality of my cooking was no longer a matter of taste--but simply a matter of fact.)
In one of my cookbooks (_The Lion House Cookbook_) there is a photo of a dish called Chicken Alabam. It looks delicious and whenever I see it I want to make it, but I never have the stuff. Tonight was like that.
So I decided to improvise something equally rich and creamy looking. I toasted some mustard seed...Sauteed some onion in a blend of butter and a very fruity olive oil...Added the toasted mustard seed...Cooked chicken breast in the butter/oil blend...Removed them and whisked in a well-blended milk-and-flour mixture and a little salt... and served this with rice and sweet corn.
I could have eaten a cup of that gravy, it was so gooooood...

I think once you know sort of what goes good together you can let your imagination run wild.
I was going to try a martha stewart recipe [I KNOW I KNOW] and lost the magazine. It was milk braised pork chops.
So I looked up on the internet what spices went with pork (I used pepper, thyme, ginger and I can't remember the other one). Then I guessed how much milk and how much oil and water (the original recipe didn't call for that, but I knew I would scald the milk if it was by itself. And voila! It was really good.

oh, how i don't miss living in the dorms.. i alternated between easy mac and ramen noodles. thankfully i still love ramen, but i can't stand to look at easy mac.

I too am discovering the horrors of cooking for one's self for the first time. Last night for dinner I had rice and tomatos with melted cheese. Now that's some fine cuisine! If any of you out there are parents, Please, for the love of god, teach your children to cook before they leave home. Do it now, before it's too late!
